Date and Nut Bread

1 c. hot coffee
1 c. chopped dates
1 t. baking soda
1 c. sugar
1 T. butter
1 egg
1 1/2 c. flour
pinch salt
1 c. chopped walnuts
1 t. vanilla

Combine coffee, dates, soda to soak. Mix remaining ingredients. Add date mixture to butter mixture. Place in greased loaf pan. Bake at 300 degrees for 1 1/2 hrs.


Apple Almond Gingerbread

5 T. butter, melted
3/4 c. slivered almonds
1/2 c. + 2 T. buttermilk
1/3 c. molasses
1/2 c. sugar
1 t. vanilla
1 egg
1 1/4 c. wheat pastry flour
1T. ground ginger
1 1/2 t. baking powder
1 apple peeled, chopped

Preheat oven to 350 degrees. Grease 8″ loaf pan. Put 1/4 c. almonds in bottom of pan and set aside.

In large bowl whisk buttermilk, molasses, sugar, butter, vanilla and egg. In a second large bowl, combine dry ingredients and remaining almonds. Add apples and toss well. Stir dry ingredients into wet mixture and spoon batter in pan.

Bake 45 – 50 min.
