Anchovy Balsamic Vinaigrette

2 garlic cloves, mashed
2/3 c. olive oil
6 canned anchovy fillets, drained
3 T. parsley, minced
2 T. scallions, minced
1/4 c. balsamic vinegar
1/2 t. ground pepper
salt

Combine garlic and oil and let steep for 2-3 hrs.
Mash anchovies to paste and add olive oil. Add remaining ingredients. Season to taste.
