Grain Hot Beverage

4 c. wheat bran
2 c. cracked wheat ground to corn meal consistency
1 c. molasses

Combine all ingredients until well mixed. Spread mixture in baking sheet. Bake at 300 degrees for ~ 5 hrs. Stir every 20 min. Result is for brewing. Ratio is 2 T. per cup of water.


Date and Nut Bread

1 c. hot coffee
1 c. chopped dates
1 t. baking soda
1 c. sugar
1 T. butter
1 egg
1 1/2 c. flour
pinch salt
1 c. chopped walnuts
1 t. vanilla

Combine coffee, dates, soda to soak. Mix remaining ingredients. Add date mixture to butter mixture. Place in greased loaf pan. Bake at 300 degrees for 1 1/2 hrs.

Corned Beef & Cabbage

1 3 lb. corned beef brisket
1 head cabbage
8 peppercorns
6 cloves garlic
4-5 parsnips
1-2 turnips
2 bay leaves
1 lb. carrots
6 potatoes
1 stalk celery, thinly sliced
3 whole cloves
1/2 t. Old Bay seasoning
1/4 t. black pepper

Wash brisket, cut slits in meat and insert garlic and cloves. Place meat in crockpot and cover with water. Add bay leaves, peppercorns, Old Bay, 2 sliced carrots and celery.

Heat on high 30 min. Skim foam.

Quarter cabbage, cut potatoes, carrots, turnips and parsnips in 2 in. chunks. During last 2 hours add vegetables and cook until tender. Remove bay leaves and discard.

Total cooking time 8 hours.

Apple Almond Gingerbread

5 T. butter, melted
3/4 c. slivered almonds
1/2 c. + 2 T. buttermilk
1/3 c. molasses
1/2 c. sugar
1 t. vanilla
1 egg
1 1/4 c. wheat pastry flour
1T. ground ginger
1 1/2 t. baking powder
1 apple peeled, chopped

Preheat oven to 350 degrees. Grease 8″ loaf pan. Put 1/4 c. almonds in bottom of pan and set aside.

In large bowl whisk buttermilk, molasses, sugar, butter, vanilla and egg. In a second large bowl, combine dry ingredients and remaining almonds. Add apples and toss well. Stir dry ingredients into wet mixture and spoon batter in pan.

Bake 45 – 50 min.

Slow Cooker Spaghetti Bolognaise Sauce

2 c. dried soybeans
4 large tomatoes, cut in wedges
1 onion, chopped
1 lb. okra, chopped
1 c. chopped green olives
2 cans (6 oz.) tomato paste
3/4 c. grated parmesan cheese
1 c. red wine
1/4 c. olive oil
1 (11 oz.) can whole kernel corn
2 T. dried oregano
2 T. dried basil
4 T. Italian seasoning
1/2 t. pepper
salt to taste

Soak soybeans overnight. In slow cooker combine all ingredients. Mix well. Cook on low 12 to 24 hrs. stirring occasionally.
